Healthy Cheesecake

 

This week I’ll share with you my favorite recipe to make a healthy cheesecake. This healthy snack is low in carbs and high in protein. Make different variations of this cake by adding a different kind of marmalade or fruits as topping.

What do you need?

For the bottom:

  • 100 grams oats
  • 50 grams raw unsalted almonds
  • 2 tablespoons of ‘cookie’
    spices (mix of cinnamon, coriander, nutmeg, cloves, ginger, cardamom, orange peel)
  • 30 ml coconut oil
  • 30 ml agave syrup

For the filling:

  • 500 grams Quark (or Greek yogurt)
  • 100 ml low-fat milk or other milk of your choice
  • 5 unflavored gelatin sheets
  • Agave syrup
  • (Homemade) marmalade

Makes 6 – 8 servings

How to make this healthy cheesecake?

Blend all the ingredients for the bottom together in your food processor until the dough forms. Spread it out evenly on the bottom of your cake mold and refrigerate for 10 – 20 min.
Let the gelatin soften in a bit of cold water for about 10 minutes.

Add 2-3 tablespoons of agave syrup to the quark and mix well. Heat the milk over medium heat and remove from the heat when it starts to simmer. Add in the gelatin sheets and stir well until they are completely dissolved. Then add the milk to the quark and mix well.  

Pour over the cake bottom and put back in the fridge for a few hours. After 3 – 4 hours, add some (homemade) marmalade on top of the cake and your healthy cheesecake is ready.
